Is there a way to register dom event handler when Easy Edit button is clicked and when the easy edit conversation ends? Do you find this valuable?

Not at this time.

We can certainly offer methods such as WPCAPI.oneditstart and WPCAPI.oneditend. I'll coordinate with Jeff to get these into the product. Is there any more information you can provide about how you would use them?
